Raw Mexican Fiesta Recipes!

We had an awesome time at the event lastnight, great people, even better food, and of course absolute madness!!  For anyone who missed the event here are the recipes for the food that was made.  Hope you enjoy it as much as we did :)

Cantaloupe-Cilantro Smoothie

Ingredients:

  • ½ Cantaloupe
  • handful of cilantro
  • juice of 1 lemon
  • 2 dates (pitted)
  • 2/3 cup water

Directions:

  1. Blend all ingredients!

Raw Superfood Corn Tortillas

Ingredients:

  • 3 cups corn
  • ¾ cups ground golden flaxseed
  • 1 cup diced tomato
  • juice of 1 lemon
  • ½ tsp chili powder
  • ½ tsp paprika
  • 1 ½ teaspoons sea salt
  • 2 teaspoons cumin
  • 1 tsp Greener Grasses

Directions:

  1. Blend all ingredients in a food processor.
  2. Smooth onto a dehydrator sheet.
  3. Dehydrate at 115 for 4 hours, flip and dehydrate for 2-3 more until it reaches the desired consistency.
  4. Cut into individual tortillas.

Mango Salsa

Ingredients:

  • 2 mangoes
  • 3 tomatoes
  • ½  onion
  • ¼ jalapeno
  • juice 2 lemons
  • 1 bunch cilantro
  • 2 dates (pitted), chopped
  • 1 tsp sea salt

Directions:

  1. Chop all ingredients and mix in a bowl!

Chunky Guacamole

Ingredients:

  • 2 avocados
  • ¼ onion
  • handful of cilantro
  • juice of 2 limes
  • 1 tsp sea salt

Directions:

  1. Chop all ingredients and mix in a bowl

Mexican Fruit Tart

Ingredients:

  • 2 cups cashews
  • 1 ½ cups dates (pitted)
  • 3-5 bananas
  • 1 cup strawberries
  • 2 mangoes
  • juice of 2 limes
  • 1 tsp Fruits of the Earth

Directions:

  1. Pulse-chop cashews and dates in food processor until chunky-smooth.  Press into a pie dish.
  2. Blend bananas in food processor and pour on top of crust.
  3. Slice mangoes and strawberries and use them to cover the banana layer.
  4. Squeeze lime juice on top for a zesty finish.  You may also add a pinch of sea salt for extra flavor!  Refrigerate for 2 hours for a firmer pie.
