Today we had an amazing turnout at the Whole Foods in Capitola, CA! The talk was on: “Raw Foods Made Easy”, where Bethany Tait (yes she has a huge band aid on her forehead!) covered subjects including nutrition, health, to making your Healthy Raw Food fun and delicious! Along with that, we were able to sample out a smoothie, cucumber slices covered with pumpkin seed pesto, and energy balls! For anyone who wants the recipes here they are:
Banana Almond Date Smoothie
Ingredients:
4 Bananas (You could also freeze the bananas)- 1 Handful of Pitted Dates
- 1/4 C Raw Almond Butter (You could also used any other kind of nut butter you like, as well as raw almonds – be sure to soak your almonds overnight if you go that route
- 1 C Water
Directions:
- Put all ingredients in blender and blend!
Cucumber Chips with Pumpkin Seed Pesto
Ingredients:
- 1 1/2 C Pumpkin Seeds
- Juice of 1 Lemon
- 1 Head of Basil
- 1 Stalk of Celery
- 1/2 tsp Sea Salt & Black Pepper (Add more or less to your taste)
- 3 Garlic Cloves
Directions:
- Slice cucumbers and put onto a plate.
- Put all ingredients (except cucumbers) in food processor and pulse chop until creamy. Spread onto your cucumber slices and enjoy!
Energy Balls
Ingredients:
- 1 C Walnuts
- 1 C Dates
Directions:
- Put ingredients into food processor and pulse chop until medium ground and the mixture sticks together in your fingers.
- Form into balls and put into a container, enjoy right away or save in the fridge for a great nutritious and healthy snack!
