Ingredients:
- 1 cup almonds, soaked overnight
- 3 cups water
- 4-5 dates
- 1 tsp vanilla extract or ground vanilla bean
Directions:
- Put all ingredients into blender and blend.
- Strain through a nut milk bag into large container. Serve as is or chill.
Peach ‘n’ Berry Parfait
- 4 Bananas
- 10 oz frozen peaches
- 1/2 cup dried shredded coconut
- 1/2 cup raisins
- 1 cup strawberries
- 1 cup dried figs
Directions:
- Blend bananas and peaches. Place into a bowl.
- Blend strawberries and figs. Place into a bowl.
- In parfait glasses, make layers with the banana-peach blend, the strawberry-fig blend, the raisins, and the shredded coconut. YUM!
Chocolate-Cherry Truffles
Ingredients:
- 1 cup Dried cherries
- 1 cup Dates
- 2 tbsp Raw Cacao Powder
- 1/4 cup dried shredded coconut
- 1 cup Walnuts
Directions
- In a food processor, pulse-chop/blend all ingredient except for shredded coconut.
- Mold mixture into balls and roll in shredded coconut
- Eat as is, or refrigerate for a firmer texture.
